Beef ...

... it's what's for dinner.

Anyway, today I learned that the cut of beef you use for cooking can make a HUGE difference ... J.S. and I tried to make steak with a cut from eye of round a couple of weeks ago and it was extremely chewy and tough (though the sauce tasted great!); when we tried again with beef tenderloin (about 4x as expensive), it was amazing.

So ... know (and choose) your pieces of meat wisely ...
